S'mores Brownie Bears

S'mores Brownie Bears

A recipe I found in the Pampered Chef Let's Eat children's cookbook I bought a few years ago, this is a great treat to take to any event with a lot of kids around, because they're perfect bite size portions.

S'mores Brownie Bears

1 pkg (10.25 oz) fudge brownie mix
1/4 cup vegetable oil
1 egg
2 tablespoons water
1/3 cup milk chocolate chips
1 cup mini marshmallows
48 bear-shaped graham crackers (I use honey flavored)

1. Preheat oven to 350. Spray cups of a mini muffin pan with nonstick cooking spray.

2. In a large bowl combine brownie mix, oil, egg, and water and mix together. The batter will be somewhat thick and a little lumpy. Place a small scoop of batter in each muffin cup. Each cup should be about 1/2 full.

3. Bake for 13-14 min. or until edges of brownie cups are set. Carefully remove pan from oven.
4. While brownie cups are still in the pan, immediately fill each cup with 5 chocolate chips, followed by 3 mini marshmallows (I spread them out evenly), and 2 bear graham crackers. Let the brownie cups cool in the pan for 5 min., then remove them from pan.

Tip: because you really have to work quickly to add the chocolate chips, marshmallows & graham crackers, it works really well if you count out these ingredients and place them in groups for each brownie cup while the brownies are baking. Then they're very easy to access when the brownies are done. Placing the choc. chips in first provides a really yummy soft fudgy center.
