Unbelievable Waffles!!! GF!!!

I received a gift card to Kohl's for Mother's Day and finally got around to using it. I searched all over several departments and finally found a nice jacket on clearance and this cute little wall decor.

And then I splurged on something I've been wanting for a while now...a waffle iron!

I've never had one before, but esp. now that I'm making all our bread items from scratch and gluten free, I thought this would come in handy. My kids aren't always big cereal eaters for breakfast, and they don't always have time to eat cereal in the mornings when they're running late, so I thought I could make a big batch of waffles and freeze them for quick breakfast alternatives.

I used the basic waffle recipe that came with the iron and switched the all purpose flour to my homemade GF mix plus xanthan gum...and I was totally shocked at how unbelievably AMAZING these waffles tasted!!! Seriously, if I hadn't made them myself, I honestly wouldn't have believed they were actually GF!!!!

It took a couple of tries to determine the best settings for the crispness and brownness of the waffles. Here's my first try, they were a little underdone and soft, but still the taste was so amazing!!!

Then here's a comparison of my first try on the top left, my second try on the far right (which was a little too crispy) and then the perfect settings shown on the bottom. Yeah, I know, this is incredibly interesting stuff, huh?

If you don't have a waffle iron, you should totally go by one because they're really fun to play with! Okay yes, today I'm a waffle geek. Whatever. It's GF and tastes awesome!!!

GF Amazing Waffles

Ingredients:

4 cups all-purpose flour (For the GF alternative I used 2 cups white rice flour, 1 cup tapioca flour, 1 cup potato starch all pre-mixed together)
4 tbsp. sugar
2 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 ½ cups milk (I used 2%)
¾ cup vegetable oil
4 large eggs
2 tsp. xanthan gum

Directions:

1. Place eggs, oil, and milk in a large mixing bowl (or electric mixer) and combine.

2. Add in flour, sugar, baking powder, baking soda, salt, and xanthan gum and mix until well blended. Let batter rest 5 min. before using.

3. Preheat waffle iron. When iron is ready spray with nonstick cooking spray and pour batter in center using a spatula to spread out evenly on the grid. Close lid and cook until desired brownness.

Recipe says it makes 20 but I got 16 very thick & delicious waffles out of it.
